    My favorite thing to eat is stuffing. It's my go to at Thanksgiving - I don't need turkey, I can live without pie, I LOVE LOVE LOVE stuffing. I can't get enough of it. But, I don't want to spend all day in the kitchen making it all the time. I came up with Crock Pot Chicken and Stuffing to make my life easy to get one of my favorite comfort foods. You're going to love this.

    Are you a long time reader of Who Needs a Cape? If you are then I don't need to tell you.but just in case you are new - I have to say it (sorry long time reader) - Slow Cooker or Crock Pot meals are our specialty here! We LOVE THEM! Lori and I are busy moms (who isn't?) and don't have all day to spend in the kitchen. Our family's want dinner and we want them easy and delish. Yup that's how we roll. I LOVE coming home to dinner being done - don't you? Or even on the week-ends I love throwing something into my crock pot and having the yummy smells of a well made dinner all day!
    So Crock Pot Chicken and Stuffing is a great meal and it's great for a lot of occasions. Not having the whole family for Thanksgiving? Make this! Having Sunday Dinner at your house? You got it - get this chicken and stuffing in your slow cooker - you're going to LOVE IT! Need a warm and comfy dinner for Tuesday night? yup - perfect again. I can eat this any day and for any reason - it's just that good!
    PS - feel free to throw in more ingredients into your stuffing - this one is pretty simple, but I've added sausage (cooked) or some apples sometimes - delish!

    Crock Pot Chicken and Stuffing

    Ingredients

    • 4 large boneless, skinless chicken breast
    • 2 cans (10.5 oz) cream of celery soup
    • 1 box (6 oz) stuffing mix (I use stove top)
    • 3/4 C chicken broth
    • 1-2 C celery, chopped
    • 1 medium to large onion, chopped


    Instructions

    • Place chicken in bottom of slow cooker
    • Mix together in a bowl soups, stuffing and broth - place over chicken
    • Have more broth on hand just in case
    • Cook on low for 5 hours
    • Check stuffing - if it is too dry add a pinch more broth, if it is too moist continue cooking without lid on, if it's cooking fine - keep cooking with lid on!
    • In total cook total for 6-7 hours
