Parmesan Meatloaf is a delicious alternative to traditional meatloaf. With classic Italian flavors and cheese, it takes comfort food to the next level.

I'll admit I didn't think I was a fan of meatloaf, in fact, I had not eaten it since I was probably 10 years old. Truth is my mom isn't the greatest cook, she will happily admit this fact. So the version that last entered my mouth 30ish years ago was somewhat of a mysterious burnt concoction to which I never wanted to revisit.
Fast forward to the fall of 2012, I'm perusing Pinterest, which I sadly spend WAY too much time on, (but that's a whole other issue) and I see a recipe for a meatloaf that actually looked appetizing to me. It had a cheesy top, which is always good in my book, I went ahead and pinned the recipe to my "Beef. Its What's For Dinner" board and kept on pinning. When my co-bloggers decided to do Meatloaf-Mania I had to admit I had neither tasted meatloaf in a very, very long time and had never attempted to make this classic dish. Today I present to you, my version of meatloaf, which my husband and 18-year-old son gobbled up, my youngest 2 children weren't fans, but my 15-year-old daughter told me I had permission to make it again.and as, for me, I really enjoyed it! I can see why it's a favored comfort food; I now understand the magic of meatloaf.
