Pros: I can drive "across town" in 15 minutes in the peak traffic time of the day.I can also stop into the grocery store, the dollar store and get my hair cut all within a 1-minute drive from place to place. Cons: restaurant choices are limited, and when you have a busy family like ours you do eat out often just because it's convenient. When the kids are even tired of eating out, they just roll their eyes at every single choice you offer up. This is when I start brainstorming quick and simple meals that I can prepare at home in NO time. Meals that can be whipped up in a snap.

I just knew these would be a hit with my family. Remember how quickly the steamed dumplings are prepared? While you are waiting for them, simply plate your salad and drizzle with dressing. The steamed dumplings could not be easier to prepare either, in the box you'll find 3 separate bags with the dumplings in them. Simply microwave the bags according to package directions.that's it! There's also delicious packages of chili sauce which you simply place in hot water to thaw, drizzle over the prepared dumplings and dinner is DONE!

Easy Ginger Salad Dressing

Ingredients

1/2 cup peanut oil
1/4 cup rice wine vinegar
1/4 cup water
2 T ginger (I used jarred)
2 T lite soy sauce
1 T ketchup
2 t lemon juice

Instructions

Blend all ingredients in a food processor or blender until mixed thoroughly. Refrigerate for one hour prior to using.

Notes
If the dressing is not sweet enough for you, add in 1/2-1 t of sugar.
