    I absolutely love pulled pork sandwiches. This recipe is now a family favorite in our house. It is so simple to make, and if your family doesn't like spicy then you can lessen the chipotle powder, or go with different spices if you want a more plain kind of pulled pork. I changed up the recipe just a bit from the original 40 meals in 4 hours post but not much. I thought it was going to be blah with just a dry rub, but it really had a kick in the taste department but it wasn't too much either. Perfect for a weekend lazy dinner. Enjoy!

    Easy pulled pork

    Ingredients

    • 5 lb pork roast
    • 1 large onion sliced


    Dry Rub

    • 3 Tbsp. chili powder
    • 1 tsp. coriander
    • 2 tsp. cumin
    • 2 tsp. onion powder
    • 1 Tbsp. Oregano
    • 1/2 tsp. chipotle powder
    • 2 tsp. sea salt



    Instructions

    • Slice onions and layer on the bottom of your crockpot.
    • Mix ingredients for dry rub, then rub onto roast.
    • Place roast into crockpot onto onion bed. Cook on high 6 hours or until roast falls apart when touched.
    • Shred and serve on buns or however you choose.
